We roast a vibrant mix of seasonal Australian veg — including sweet potato, zucchini, carrot, eggplant, spinach, and golden pumpkin — to bring out their natural sweetness and depth. Most of these vegetables are rescued through our partnership with Farmers Pick, helping reduce waste without compromising flavour. Instead of meat, it’s this colourful harvest that forms the rich base of our sauce, slow-cooked with tomatoes, garlic, herbs, and extra virgin olive oil.

Layered between sheets of handmade Rustica Viva pasta and our signature three-cheese blend — mozzarella, ricotta, and parmesan — this is comfort food with substance, story, and soul.
